Among the many kolagach (banana
plant) products Bengalis have thought to turn into delectable food items,
kachkola’r dalna (raw banana dalna) remains an eternal favourite. Kachkol’r dalna
are delicately spiced, deep – fried raw banana fritters. Kachkola with fried potatoes,
ginger paste, green chillies paste and host of dry spices including bhaja
masala which gives the Kachkol’r dalna their distinctive flavour. This raw
banana or plantain curry is hot, and gingery. As always, we finish particular
dalna too with some ghee and garam masala.
Ingredient

Two tbsp of mustard oil
§
4 medium size potato peeled and cut into chunked
3cms
§
Two raw banana peeled and cut into chunked 3cms
§
Two Bay leaf
§
1 tsp Cumin seeds
§
Two tsp of Ginger paste
§
2 tsp of Cumin powder
§
3 tsp of coriander powder
§
1 tsp of turmeric powder
§
1 tbsp posto bata (Poppy seeds paste)
§
Salt as per taste
§
1 tsp garam masala
§
1 tbsp desi ghee
§
2 tsp green chilly paste
Method
1. Take
kadai or pan. Put two tbsp of mustard oil. Fry Potato.
2. Take out
the potato when it is cooked.
3. In the
same oil add two Bay leaf, 1 tsp Cumin seeds.
4. Fry for 1
minute. Add two tsp of Ginger paste (1 inch) and chilly paste.
5. Add 2 tsp
of Cumin powder, 3 tsp of coriander powder, 1 tsp of turmeric powder. When
spices gives good smell add 1 tbsp posto bata (Poppy seeds paste).
6. Add Salt as
per taste and cook till the oil starts separating and can be seen at the edges
of the masala.
7. Add raw banana
cubes first.
8. When
banana cubes cooked. Add fried potato. You can add little water if masala is
too dry. Fry for 5 minutes.
9. Lastly
add 1 tsp garam masala and desi ghee.
10. Garnish
with coriander leave.
* 1 Tbsp of coconut also can be added after step 5
